SPECIFICATION

DESICATED COCONUT – MEDIUM GRADE

A.    PHYSICAL:

Color:                   Naturel White, Free from rancidity, musty

Flavor:                  Mild and sweet coconut taste with no off-flavor

Impurities:           No more than 5 dark or yellow specks per 100 gram

Particle size:        About > 5 mm: 10%; Between 3–5 mm: 75%; Below: 3 mm: 15%

B.     CHEMICAL:
Fat content:                     65 ± 3 %

Free Fatty Acid (FFA):    0.3 % maximum                    

(As lauric acid)

Moisture:                            3.0% maximum

Residual SO2:                 100 ppm maximum

C.    MICROBIOLOGICAL:
E.Coli:                              Negative

Salmonella:                      Negative
D.    HANGLING AND STORAGE:

The product shall be stored in cool dry conditions (under 20 degrees Celsius) free from strong odor or smell. Otherwise, it should not be loaded more 10 bags in the same column for packing 50kg net/ bag and about 20bags for packing 8 – 10 kgs net/ bag.
